Prepare the sauce

Cut your onion into quarters, peel the carrot and dice it. In a saucepan, heat 2 tablespoons of olive oil. Adding onion, carrot, garlic clove & ground beef. Cook for 5 minutes or until beef is cooked through. Add tomato purée & can of peel tomatoes. Add a little water and simmer the sauce at low temperature for 30 minutes. When they are cooked, place all the ingredients in a blender and mix them until you obtain a homogeneous preparation. Strain the mixture and set aside for later.

Prepare the vegetables

Finely chop the shallots. Deseed and finely chop the green chillies. Roughly chop your parsley and set aside.

Compose your taco

Coat each tortilla with sauce to give it an appealing flavor and color. Fry each tortilla in a hot pan, adding a knob of butter. Once the tortilla is cooked, add beef, shallot and peppers if you like spicy dishes. Top your taco with shredded cheese and parsley, then close it. Enjoy it while it’s still warm, once the cheese has melted.
