Southern strawberry cake

°300 grams of flour
°225 gm sugar
°170 grams butter
°3 tbsp. Baking-powder
°4 egg whites
°25 cl milk
°8 tsp. strawberry syrup
+for cream
°250gm mascarpone
°125gm strawberry
°75 grams of sugar
°1 sheet of gelatin

Lemon Crunch Cake

  • Preparation:

Step 1
Beat the soft butter and sugar for a minute, then add the egg whites one by one. Then, while continuing to whisk, alternately add flour and milk.
The second step
Place an 18 cm diameter circle on a baking tray lined with parchment paper and cover with about 1/4 of the dough. Bake for 12 minutes in an oven preheated to 6 °C (180 °C). Then repeat the process with 3 more cakes. Let them cool down.
Step 3
Then soften the gelatin with cold water. Then mash 3 strawberries and heat in a small saucepan. Add the filtered gelatin to the fire. Cut the remaining strawberries and mix with mascarpone, sugar, and cooked strawberries.
Step 4
Cut 4 discs from each cake and brush one side with the strawberry syrup. Lay it out in 4 layers, garnish with strawberry cream, then cover completely with the rest of the cream. Continue 2 h in the fridge.
